It all began when a few Greek and Italian friends, enjoying moonlit evenings on Symi’s seafront, decided to marry the rich cuisines of their two countries. As the Symiots recall, a desalination plant operated in this building during the 1960’s. Once a prestigious mansion in the harbour, it then puffed white clouds of steam into the sky, earning itself the nickname of <la vaporetta>, an Italian name that the locals have kept until this day.

New white clouds now rise from <la vaporetta>, but today they bear the aromas of the various Mediterranean dishes that are carefully and lovingly prepared each day. This is our way of being faithful to the culture of hospitality that Greece taught to the world.
